With Mother's day just a few days away, I thought I'd share with you some of my favorite brunch ideas. All of these recipes are super simple and will not require too much time or money to prepare. I'm sure your moms will appreciate them.

1. Omelet Surprise: oh the things you can do with eggs!

2. English Muffins with Avocado, Canadian Bacon & Poached Eggs

3. Challah French Toast: good for either main course of your brunch or served as dessert

4. Asparagus with Poached Eggs and Dill Sauce

5. Bread Pudding: I used challah, you can use whatever bread you have on hand

6. Mini Fritatas: somehow everything looks cuter when served in individual portions

7. Salmon Towers: a fun take on bagels, cream cheese & smoked salmon

8. Zucchini Muffins: make extra to have for breakfast the rest of the week or to freeze for later

9. Cherry Tomato Studded Jalapeno Cornbread: colorful, delicious, and uses a Jiffy mix as the base

10. Coconut Rice with Grapes: feel free to use other fruit such as peaches, nectarines, oranges or apples
