A Father's Day luxurious meal does not have to include going out to dinner. This restaurant-quality barbecue will delight your dad, husband (and father in law to boot!) and not break the bank. For approximately $175, 8-10 hearty eaters, you will look like a hero, indulge, and have your men feeling like a king!
Appetizer
Early that Sunday, head on over to your favorite seafood/fish store. Pick up 5-6 lbs of steamers. (Many retailers run specials on multiple pounds- at Jeff's Seafood in Huntington it's $20 for 6 lbs or $3.59/ lb)
20 minutes before steaming, add a handful of cornmeal to some water filled with the steamers. This will extrude all of the sand.
Steamers with spicy melted butter
2 stalks of celery, chopped in medium dice
2 bay leaves
2 cans/bottles of your favorite beer
6 lbs. steamers
In large stock pot, heat 1 tbs. olive oil over medium heat. Add celery, bay leaves and steamers. Pour beer over steamers and cover. Bring to boil, lower heat to a simmer and steam for approximately 5 minutes, or until steamers open.
Remove steamers from broth. Use broth (minus the celery and bay leaves) as a dipping sauce
Serve with melted butter infused with 1 clove of crushed garlic and a pinch of hot pepper flakes
Steaks, Chicken and Chops
Earlier on in the week, check out Omaha Steaks for a value driven, fantastic option to the supermarket meat department. For $59.99, you will receive by dry ice in the mail- 2 (6 oz.) Filet Mignons, 2 (6 oz.) Top Sirloins,4 (4 oz. approx.) Boneless Chicken Breasts, 4 (4 oz.) Omaha Steaks Burgers, 4 (4 oz.) Boneless Pork Chops, 4 (5.75 oz.) Stuffed Baked Potatoes and 1 (6 in.) Chocolate Lover's Cake. This is certainly enough to feed a crowd! At my local market, rib eyes are on sale for $6.99 a lb and that is for choice meats! Omaha steaks has many options and upgrades to choose from, but one option they do not have is skimping on quality. This company, around since 1917, hand cuts and ages their grain-fed meats then packs them up and flash freezes (140' below zero!) them at their optimal peak for depth of flavor and tenderness. Omaha Steak guarantees their product so you do not have to worry or be concerned. Ordering on line is easy, but if you are in the area of Plainview, they have a retail store there (they boast 80 stores around the country!). Omaha also sells seafood, pork, chicken and veal in addition to sides and condiments.
Grill your steaks like an expert over gas grill or use Kingsford Competition Briquettes for your grill. These briquettes are all natural, burn long and hot.
Breads and Vegetables (approx. $15)
Pick up 2 heads of broccoli crowns. Serve this with your main dish simply steamed with a squeeze of lemon and a drizzle of good olive oil, salt and pepper.
Shuck a dozen ears of corn. Add to boiling water ( do not add anything to the water). Bring water back to the boil and then immediately down to the simmer. Cover and allow to stand in water for at least 20 minutes. Corn will stay for at least an hour this way. Serve plain. Good corn does not need anything at all!
Pick up 2 large loaves of Italian or French bread. Cut loaves in half. Slather with Land O'Lakes butter with roasted garlic and oil. Run under the broiler for 1 minute. Cut into pieces. This makes fantastic garlic bread!
Another solution I have is to have a signature cocktail on hand. There is nothing more festive than a pitcher of some fruity concoction to get the party started. In my household, Father's Day signifies that summer is here and to me that means rum. A Mai Tai is so delicious and refreshing. Served on the rocks just as Trader Vic, it's inventor, wanted it to be served... it just makes you smile.
A proper Mai Tai: 1 serving (At about $60, this recipe will make approximately 20 cocktails)
1oz Jamaican rum
1oz Martinique rum
1/2 oz orange curacao
1/4 oz Orgeat syrup
1/4 oz sugar syrup
the juice of one small lime, mint spring to garnish
Shake with crushed ice, serve in a rocks glass, garnish with a mint sprig, one pineapple spear, and a cocktail cherry.
Dessert (approx. $7)
A chocolate cake comes with your Omaha Steak Father's Day package. For added indulgence, add a scoop of your favorite premium ice cream and a dollop of freshly whipped cream
Whipped Cream
1 pint of whipping, heavy cream
1 tsp. sugar
In a chilled bowl, add heavy cream. Using an electric beater, whip cream for 1 minute on medium speed. Add sugar and continue to whip until cream is thick. Be sure to not over-beat or cream will turn to butter! Store in refrigerator until ready to use, covered with Glad Press and Seal
