Throw a Cinco de Mayo fiesta

For our own health and safety, the federal government discourages travel to and from Mexico until the swine flu is under control. Fine with me, because I would prefer to transform my home into a resort in Alcapulco and invite "mis amigos" over for a fiesta. Vamanos!

Decorate in festive colors. Think of the colors of red hot chili peppers, green jalapenos, and golden corn (some of the ingredients for a yummy salsa). Cover the tables in a Mexican blanket pattern. Accessorize with maracas and sombreros. If you want to do more, buy a few pots of cactus to sit around the party space.

Since I mentioned salsa, I can't stop thinking about the menu for the party. Burritos, quesadillas, nachos, tacos, chimichangas, tostadas, rice, and salsa. Make them with pork, chicken, beef, or beans. Don't forget the cilantro, guacamole, and sour cream. If you can't make them yourself, then you might have to preorder at your favorite Mexican restaurant (I'm sure they will be busy that day.)

Plan to have lots of drinks. Flavored margaritas in salt-rimmed glasses and Corona or Dos Equis. Slice up a few lemons and limes ahead of time so they can garnish the drinks as needed. Here is the recipe for my favorite, Mango Margarita from Food Network (you can also buy the mix and just add Tequila)

MANGO MARGARITA
1 1/4 ounces silver tequila
1-ounce triple sec
1 1/2 ounces freshly squeezed lemon juice
2 ounces simple syrup or sweet-and-sour mix
3/4 cup partially frozen mango, unsweetened (prefer individual quick frozen or fresh)

  • Place all of the ingredients in a blender and blend until smooth.
  • Pour the mixture into a glass.
     

Don't forget the salsa and mariachi music. For a final punch of fun, hang a piñata and take a whack at it.
