Before buying corn on the cob, examine it carefully for freshness. As soon as the corn is picked, it begins to loose it natural sweetness. Look for ears with bright green husks and golden brown silks. The husks and silks should have a fresh appearance, not dried. If you pull the husks back an inch in one spot, you should find medium sized plump kernels with no shriveling. If the kernels are over large, then the corn may be too mature and have a starchy taste.
Refrigerate the corn until it is time to cook. You should cook your corn as soon as possible after purchase, ideally the same day. If you must refrigerate for 2 to 3 days, add a teaspoon of sugar for each quart of cooking water.
