Just because your non-vegan friends have the grill fired up and weenies cooking over bonfires doesn't mean you can't enjoy some delicious and easy vegan recipes.  Examiners from all over the country have been busy touting their favorite feasts and foods for summer, so here's just a sample:

I can't say I've ever had crab cakes but Philadelphia Vegan Examiner Ed Coffin's photos look pretty darn good.  These scrumptious patties require a little bit of mixing, spicing, and baking and can be served with Coffin's vegan hollandaise sauce as well.  Coffin also runs the Eating Consciously blog where he interviews vegan writers and events.  You'll also find some of his recipes and resoureces there.
