This quick treat makes a delightful evening drink to quench even the most bad tempered Leprechaun’s thirst. But just in case, you might want to have some ale on hand!

In a small bowl pour ½ cup strong coffee with two tablespoons of Irish Cream liqueur. Alternate scoops of vanilla bean and chocolate mint n’chip ice cream in a tall glass. Pour a ¼ of a cup of warm coffee over ice cream and top with a scoop of whipped cream. Add a mint leaf for décor and enjoy!

For a fuller and more colorful whipped cream topping, blend a ½ teaspoon of Irish Cream liqueur and a few drops of green food coloring while whipping the cream. I didn’t have maraschino cherries but it sure would be a beautiful addition.
