Bringing family and friends to the table and sharing food is what separates us from other life forms; it creates bonds, feelings of love and acceptance. To aid in the ritual of creating meals and breaking bread, I have put together an updated list of cooking and baking classes in the Baltimore and surrounding areas. This time I have set them up by area: Baltimore City, Baltimore County, Howard County and Anne Arundel County. If you know of other classes being offered in the area please share and I will update this list.

New to the list this time is former White House pastry chef, Ann Amernick, Shelbie Wassel, Catherine Berenson, Simone Martini and Every Day Gourmet.

Sunday, November 8 – Holiday Cooking - $65

Executive Chef Bill Crouse wants you to be prepared for your holiday gatherings as he takes you through the fine points of holiday dishes, even turkey. The class has optional hands-on opportunities to get in there and learn. After working in the kitchen, students will enjoy sitting down to taste the dishes prepared and have wine. Chef-for-the-Day Program: Executive Chef Bill Crouse and Chef-for-the-Day participant plan a four course dinner menu that the guest chef prepares under the tutelage of the Executive Chef. Friends, family and restaurant patrons are offered that menu during dinner service. $100

The classes are no more than 5 people @ 40.00. They are hands on and I try to send home all things that are made by the participants. Right now, I'm getting requests for pies, and I'm showing them my way, a little different, a way to avoid the soggy bottom crust.

I'm happy to teach cake decorating classes, more than piping techniques, sugar flowers, that sort of thing, even sugar painting.

Cooking Class Parties

OKTOBERFEST - Annual Cooking with Beer Dinner
Friday, October 23rd
$95 per person or $175 per couple
Everyone loves brats and beer, but we try to give that hearty Oktoberfest meal a little more panache while keeping the pizzazz!

We'll start off with some killer Homemade Soft Beer Pretzels with a Cheese & Ale Dip, then of course we'll have Brats, but we'll braise ours in Beer then finish 'em on the Grill. We'll have a reprise of Les White's earth-shaking Hog's Head Chili with Sweet Corn 'Pone. Then since too much beer's never enough, we'll finish our beer fest with Double Chocolate Porter Ice Cream over Triple Fudge Brownies with Guinness Laced Hot Fudge Sauce.

We're working on getting Beer Meister extraordinaire, Dan Gore with us that night!

SUSHI - Maki, inside-out rolls, hand rolls & more

Did you know that 'sushi' refers only to the RICE and not the FISH at all? It's all about the rice you use, and the way you make and season it. So of course, we'll start with the rice, then go on to making those wonderful sauces to accompany your rolls ~ wasabi, the king of sushi sauces, spicy sauce, and a mayonnaise-y horseradish sauce.

Then with our sushi grade tuna and salmon, as well as shrimp, smoked salmon, crab sticks, flying fish roe, avocado, all sorts of vegetables, some 'crunchies' for texture and lots of imagination we'll make the best - and certainly the most creative - maki you've ever had!

Tuesday, October 27 7 p.m. – Everyday Indian - one of the most underdone regions in the last cooking class, this class will cover a lot of the flavors of classic Indian food while paring down the methods to make them more appropriate for everyday use. Menu is Tandoori Cauliflower Curry with Chickpeas, Butternut Squash and Spinach Curry with Cilantro/Cashew Raita, and Tomato Cumin Rasam (soup). This class will be completely VEGAN, containing no dairy for animal products.
