We're into the hottest weeks of summer and all I can think about is not turning on my stove. When I was in Italy, one of my favorite dishes was a fennel and orange salad. If you have never had fennel, it has a licorice flavor, looks like celery but has a bulbous end. The very simple version is below but you can add shaved Parmesan cheese and baby arugula. Use an extra virgin olive oil when dressing the salad.Stay cool and mangia, mangia, mangia (eat, eat eat) |
