Okay people. Before the food coma sets in, I have to tell you about Skillet.
They’ve been on my radar for quite some time…but quirky locations, a limited schedule, and no weekend appearances threw up all kinds of obstacles. I couldn’t resist one more day…and finally tracked them down today. And you know what? I’ve been woefully deprived until this very moment!
Skillet is the brainchild of Josh...and Danny (No last names, please!)
The premise is simple. Take a gleaming Airstream trailer, add a generator-powered kitchen, find a parking lot and…voila! You’re in business. Weekly e-mails provide their whereabouts...tossed with a little of this-and-that. (The truck was stolen. Oh no, wait. It turns out, it was towed. We paid the impound fee and will be back in action tomorrow…)
Don’t let the nonchalance fool you.
This is anything but a casual affair.
Skillet is run by serious cooks serving up damn fine food. This morning’s breakfast included maple braised pork belly, cornmeal waffles and a maple “syrup” jus…topped with a perfectly fried egg. Tines of my plastic fork slid easily into tender pork belly that separated in moist hunks of meat, lingering with heady flavors redolent of caramel and molasses. What a way to start the day!
I have no shame. I mean, after all, it’s breakfast…in a parking lot…whipped up in a trailer. If it were a little less…public…I’d be dragging my finger around the cardboard crevices, mopping up every last drop of that mapleporkeygoodness.
For what it’s worth….next time, I may have to dine in the seclusion of my car...so I can lick my fingers too!
