Which food comes to mind when you want to soothe your soul and have a body warming meal? If you answered soup, you hit the jackpot. The real jackpot is the healthful, nourishing bowls of Pho, the Vietnamese noodle soup that’s sweeping the country. One of the best in the Portland area is Pho Nguyen, located in a non-descript strip mall off Beaverton-Hillsdale Highway in Southwest Portland. The location doesn’t keep the crowds at bay. This place has major word of mouth dynamic in its favor after only 4½ years in business.  It's the type of place where you walk in and say, "I'll have the usual" and they know exactly what you have in mind.

The bill of fare has over 20 offerings of Pho (beef noodle soups) typically made from eye round steak, brisket or honey comb tripe, ranging in price from $6.25 (small) to $6.75 (large). Each bowl comes with basil, lime, bean sprouts and peppers added by each customer to their taste. On every table are a bevy of condiments, including hot chili sauce, hot garlicky pepper sauce, vinegar and soy sauce for extra flavoring.

Split an appetizer ($4.00-$7.50) with somebody because the soup bowls are immense. A couple of fine choices are the lighter vegetable and tofu salad rolls made with delicate rice wrappers ($4.00) or the fresh spring rolls ($4.00), a deep fried heavier version.

Other specialties are Com (rice plates), steamed rice with succulent shrimp, pork or chicken ($7.50-$9.50) and Bun (vermicelli bowls), grilled tender pork or chicken over rice stick noodles ($7.50-$8.00). Both Com and Bun are good sized portions so share if not feeling up to the task.

The Mon Cuon, or self-rolled items ($7.00-$10.00), are a fun twist to lunch. Roll your own grilled sugarcane shrimp with crispy shrimp served with mint, rice paper and peanut sauce. This is on the sweet side so be geared up.

Giai Khac, or beverages (all $3.00), are an extravagance. Iced Salted Lemonade or Fresh Coconut Juice is a sampling of potions waiting to put out the fire if too much hot chili sauce was added in the Pho.

Treat yourself to Pho Nguyen and keep the word of mouth widespread.  Next time you go in they may just remember your "usual".
