Fall welcomes with it many holidays: Columbus Day, Halloween, Thanksgiving, and the beginning of the Christmas season. Many people do not realize that Fall also brings with it "National Sandwich Day," a day in which the staple lunch item of the sandwich is celebrated.

Many moms might feel like they celebrate "National Sandwich Day" on a daily basis as they routinely slap on the same peanut butter and jelly onto the same whole wheat bread morning after morning as lunches are prepared to be taken to school. In honor of "National Sandwich Day" moms need to take a cue from the creator of the sandwich, the Earl of Sandwich (believed to have created the sandwich out of necessity, needing a food he could hold with one hand while playing cards with the other), and add a dash of creativity to their normal sandwich-making duties.

  • Make use of cookie cutters. A plain PB&J can be transformed into a turkey or a leaf with the mere cut of a cookie cutter. Surprise children at lunch time with a sandwich made into a fun shape. Several companies have marketed sandwich cutters to help mom make a more creative sandwich.
  • Add fun ingredients. Peanut butter does not always have to be paired with jelly. Transform the average peanut butter sandwich into something spectacular when unusual, yet tasty, ingredients are added. Spread 2 tablespoons of peanut butter onto a whole wheat tortilla, top with chopped apple and granola, then roll up. Cut the tortilla in half for easy eating. The peanut butter sandwich has been transformed!
  •  Experiment with the bread. Sandwiches do not have to be housed between two pieces of regular bread. Grocery store shelves are filled with a variety of interesting breads that can make a delicious sandwich. Contemplate stuffing chicken salad into a pita, serving turkey and cheese in a hot dog bun, or making pepperoni and cheese into something special by using Flat Out wraps.
  • Turn the sandwich into dessert. Sandwiches are not merely for lunch. They can be eaten for breakfast or dinner as well. Something really fun to do with a sandwich is make it into a dessert item. Take two cookies, spread some whipped cream between the two, sprinkle the sides with mini-chocolate chips and serve dessert sandwiches after supper. Another sandwich that makes a yummy dessert is spreading chocolate hazelnut spread onto a slice of bread, top with bananas and marshmallows, cover it with another slice of bread and then heat it for a few minutes in a buttered skillet. Sprinkle with powdered sugar and serve.
