
Ice cream is great as a summer treat! The problem with it is't the fat, it's the sugar it's made with. Even store-bought "low carb" ice cream isn't what we should be eating because of all the chemicals in it. So, here's a great way to make a single serving of fresh ice cream! Of course the recipe can be increased for more than 1 serving.
Ingredients:
1/4c heavy whipping cream
45-50 grams frozen berries (here I'm using strawberries)
1 tsp sweetener (I'm using SweetPerfection, 100% natural sweet fiber)
Directions:
With strawberries still frozen, cut or chop into small pieces. (A food chopper works great for this!) As sweetener and cream and mix well. You want to make sure the sweetener is well mixed and dissolved before freezing.
Place bowl in freezer and check it every 10-15 min. When checking it, stir it well, being sure to scrape the sides of the bowl. A sharp knife works well in scraping the bowl. Freeze until it's the desired consistency.

Calories: 227
Fat: 22 grams (Sat: 14g, Poly: 1g Mono: 6g)
Carbs: 8 grams (fiber: 3g)
Protein: 1 gram
SweetPerfection is almost 100% fiber. 1 cup = 127 g with 122 g fiber.
Any berry works and if you want a real treat, leave out the berries and use 1T unsweetened cocoa and 1T sweetener!
