5 minute dessert, decadent chocolate cherries with ice cream

Less than 5 minutes to prepare and so good.

 

Today is National Chocolate Covered Cherry Day. I couldn't let it go by without creating a treat for my husband. With my hubby being insulin dependent diabetic I have to think twice about what he can eat.

I had a tub of Pennant red cherries left from the holidays, and when I checked the nutritional values, I figured a couple wouldn't hurt his diet. 1 cherry is 15 calories, 0 fat, 4g of carbs, and 2g of sugar.

First of all I put a saucepan on the stove, with some water in it, and took it to boiling point. Next I broke off 2 pieces of sugar free chocolate, and put it in a small Pyrex bowl, and sat it in the water to melt.

I then dipped three cherries into the chocolate.

Hubby has vanilla sugar free ice cream, so first a scoop of this on a plate. Followed with the chocolate covered cherries, and finished off with a little graham crackers, that had the remaining chocolate on them.

I had mine with regular ice cream, and the bitter sweet Bournville, dark Cadbury chocolate. These are to die for. Mine were full of calories and I so enjoyed them.

Either way this takes less than 5 minutes to prepare.

The Pennant Red Cherries came in an 8 ounce tub, and had a coupon for $1.25 off the next purchase.
