Cinnamon Apple Bread Pudding a La Mode from Baltimore local chef Tucker

One of my favorite things about fall is APPLES! I love them in desserts, in main entrees, on their own, on pizza (had that the other night and LOVED it) and did I mention dessert yet?  This recipe from Chef Tucker from the Owl Bar will surely get everyone at the table to "oh and ah" not just from the smell alone but the mouth watering taste.

Cinnamon Apple Bread Pudding a La Mode

Ingredients:

  • 3 eggs, beaten
  • 2 cups heavy cream
  • 2oz Spiced Rum (Captain Morgans for example)
  • ¼ teaspoon salt
  • ¼ cup brown sugar
  • 6 cups lightly toasted croissants, cubed into ½ inch pieces, about 4 large croissants
  • 1 teaspoon vanilla extract
  • ½ cup raisins
  • 1 teaspoon ground cinnamon
  • 3 red apples, peeled and diced into ¼ inch pieces
  • 2 packets Instant Apple Cinnamon Quaker Oats
  • ½ gallon ultra premium vanilla ice cream

 Directions:

Preheat oven to 350 degrees.  In a bowl, whisk together eggs, cream, rum, salt, brown sugar, vanilla extract, and ground cinnamon.  Fold in toasted croissants, apples, raisins, and oatmeal packets until croissants are moist.  Spray a 9x12inch baking dish with cooking spray and pour in mixture.  Bake at 350 degrees for 45 minutes.  Let sit ~20 minutes.  Serve in 2x2 squares with a scoop of ultra premium ice cream.

Each dish he creates comes from Chef Tucker's heart and is full of his passion and vision as a chef.  He was awarded a Veal Oscar for Best Demo at the Atlantic City Food Show.
