My kids didn't even know it was cauliflower. And when they found out, the have been bugging me to make more, because they can't get over how very much they like this recipe. I have to make a run to the store this morning for more cauliflower, as a result! They don't even like other pizzas this much! I had to snap pictures quickly, because people kept trying to eat the props!
Can a pizza be more perfectly pleasing? Gluten-free and low-carbohydrate enough to be enjoyed on Atkins induction?

So I made the cauliflower pizza crust tonight.. it was awesome! I made half cheese and half pepperoni and enjoyed the half with toppings best.. so I would tell you to put toppings on it if you enjoy them. It made it more flavorful. I also did not use fennel as a seasoning.. only oregano. Fennel to me is for sausage.. but it is just a taste thing.. I make my own sauce being italian.. what an enjoyable dinner!
This was a fabulous discovery.. this is not only the first time I saw a recipe like this.. but also the first time I riced cauliflower. It really looks like rice.. I am going to experiment with stir frys and things.
The pizza was fabulous and you must try it. My mom even ate some and she is the pickiest eater ever. She told me that she would definately eat it again.
My only concern is that it is alot of cheese.. but I guess with atkins that is ok.

Cook it a little longer
Crust won't come off of cookie sheet, after maybe 20 minutes it still is doughy.
Could you brush the crust with olive oil to get it crispier?
You can also buy the Italian flavored Flat Out flat bread at Safeway or Walmart and use it as pizza crust. One only has about 6 net carbs. I make pizza's this way almost once a week. I think there are recipes at the website--www.flatoutbread.com. Good Luck!

My boyfriend and I tried out your pizza tonight and it was fabulous! We made ours with onion, apple and cheese... it was so good. ^^ Great recipe!!!!
Thank you!! You know when I was adding shredded cauli to my 'deep dish pizza quiche' crust (worked great but never thought of your major recipe idea for some reason, go figure!), I found that using jack cheese is also nicely bland and bulking--and lower carb. Just fyi! (How ARE you??)

Just finished eating this. It was very good! I could taste the cauli a lottle but I like it so that's ok. I made a pepperoni one and one with chicken, peppers and onions. Both are fantastic. My only qualm is that, as others have said, it is mushy in the middle and doesn't stand up. I baked mine on parchment paper instead of greasing a cookie sheet.

Sprinkle the buttered pan first with freshly shredded parm. cheese. Thats my only improvement. Low-Carb people, this recipe absolutely rocks! Double the recipe for a sheet style pizza for the whole family.

I just made this recipe a few minutes ago and was so shocked that it really worked I used a food processor to chop fresh cauliflower then steamed in the microwave for a few min. made the recipe as you suggested and it came out great, had my Husband and son try it they said it was good this is coming from 2 of the pickest eaters in the world who I can't get to eat any veggies at all... I doubled for a family of 4, two pieces leftover. Worked out really well. Diabetic hubby was even happy! Will definitely fix this again!
I think I botched this up...I baked it for 15 minutes, and it wasn't very crisp and didn't hold together. What did I do wrong? Did I maybe didn't spread it out far enough of the pan?? Please help, since the I CANNOT wait to make my pizza...

I have made the pizza twice and absolutely love it as well as my family. I cannot get the dough to be crisp though - always have to use a fork to eat. How do you make crust so that it is able to be picked up? I use fresh cauliflower - steam until soft, rice it and mix??????
I made a few changes. Serves one.
1/2 cup (56g) cauliflower, raw & grated
1 egg
1/2 cup (56g) mozzarella cheese
Fennel & Oregano to taste
Preheat oven to 450.
Spray roasting pan with non-stick spray.
Combine raw cauliflower, egg, mozzarella, fennel & oregano.
Place parchment paper in pan leaving a little extra overlapping for easy lifting.
Spread on parchment pressing with fingers to ensure it is even & not to thick.
Bake at 450 degrees for 12-15 mins. At about 12 mins turn broiler on high so it is ready to go once the pizza base is topped.
Remove from oven. Top with sauce, toppings & cheese.
Place under a broiler until cheese is melted.
**I used a dark roasting pan & measured by weight. I put parchment on a board leaving some overhanging for ease of lifting. Weighing out half an egg (25g) I found it needed the whole egg. While the base was cooking I made a quick sauce & sautéed some veggies for toppings. I added an ounce of mozza & fresh parsley too.
I should add that it was crisp. I made it with cooked cauliflower but found it a bit soggy. Raw cauliflower works better in my opinion.
My wife and I are both health conscience and we decided to try this recipe over the Memorial Day weekend. We doubled the recipe and used a Pizza baking stone to cook the crust. We didn't have non-stick spray so we used coconut oil, which is what we use instead of regular oil. The result was fantastic.
Pizza did not stick to stone and crust was very crispy. We ate it with a fork because I really piled on the meat. Good recipe 5 stars.
I made this last night! PERFECT! It's still good this morning for left overs!! SOOOOO EASY!
would have never thought of this but it's delicious!!! great for the low carb diet and it has the added emotional value of LOOKING like something forbidden :P YUM. next time i will just spread the crust more evenly on the cookie sheet.
