Tinsley Meloy is the Gluten-Free Guru and Founder of Celiebo™, an advocacy group for the celiac and gluten-intolerant community. Celiebo has developed a proprietary curriculum that certifies restaurants as safe establishments for gluten-restricted diners. Celiebo has been actively recruiting and certifying restaurants through its training program since 2010. Through Celiebo and her charitable endeavors, Tinsley hopes to raise greater awareness about celiac disease and its proper diagnosis. Currently the condition affects more than three million Americans, only three percent of whom will be accurately diagnosed.
