Looking for easy breakfast and brunch recipes? I have some delicious brunch ideas that I'd love to share with you over the next few weeks. But for now, let's start with this easy Broccoli, Ham & Cheese Quiche. It's a classic quiche recipe that I've been making for years. Don't care for broccoli? Substitute asparagus or zucchini. Not a fan of ham? Fry up some bacon. Want to add some color? Dice up a red pepper and sauté it with the onion and garlic. Are you a cheese snob? Then go to your local specialty cheese market and pick out your favorite. On a diet? Substitute low fat milk for the half-n-half. After all, it's your quiche. Make it the way you want!

 

Flaky Pie Crust Recipe

Allow me to brag a little. My husband makes the absolute BEST pie crust in the world! I'll bet you're thinking you read that wrong, aren't you? He really does! Follow the directions for my recipe,the Best Pie Crust Ever, and you can't go wrong. Don't over work the pie crust. Don't knead it like bread dough. He's made thousands of them over the years, and if a guy can make pie crust, then you can too!

 

Broccoli, Ham & Cheese Quiche Recipe

  • 1) unbaked 10" deep dish pie crust, crimped and fluted a little higher than the pan.
  • 1 1/2 cups total of shredded cheddar, parmesan and/or Swiss cheese
  • 3/4 cups small broccoli florets
  • 1/4 cup onions, diced small
  • 1 tsp minced garlic
  • 1/4 pound diced cooked ham, pancetta or bacon
  • 5 large eggs
  • 2 1/2 cups half & half
  • 1 tsp salt, more or less to taste
  • 1/4 tsp nutmeg, ground
  • 2 Tablespoons fresh or dehydrated dill, minced fine

 

How To Make Broccoli Quiche

  • Make the best pie crust according to my recipe.
  • Preheat oven to 350 degrees F.
  • Steam broccoli and set aside.
  • Sauté onion and garlic together.
  • Spread the cheeses over the bottom of the unbaked crust, then the ham, broccoli, onions and garlic on top of the cheeses. This would also be the time to add any other veggies and/or cooked meats you want to substitute
  • In a mixing bowl, using a hand-held mixer or a whisk, combine eggs, half & half, salt, nutmeg and one Tbsp dill together until mixed well.
  • Pour liquid over the veggies and meat very carefully so as not to disturb the fillings. Sprinkle the rest of the dill and some Mrs. Dash over the top.
  • Very carefully, place the quiche on a baking sheet and bake at 350 degrees F. for 45 -60 minutes, more or less, or until knife comes out clean. Cool 15 minutes before slicing.
  • Cool completely before wrapping and refrigerating any leftovers...if there are any!
  • Serves 8 regular people or 2 if my husband is eating it!

    That is two and a half cups (2 1/2 cups) of half and half, not 1 cup.

    I love pies and quiches since they are great when our friends come home for dinner. In general, I like to replace the standard baked ham with some jamon iberico de bellota - aka iberico ham or patanegra-. It is true that it is more expensive but the taste of the dish really improves making it way more refined.
