2011 food trends – top 10 list of top 10 lists

Were the pundits correct in their 2011 forecasts of food trends for the home, restaurant and supermarket shelves?  This is the time of year where we look back at the year ending.  There are so many top ten trend lists that I have put together my top ten list of the top five, ten or twenty lists of 2011 food trends.

1 StarChefs.com:  "Another year of tastings has come and gone. And we’re excited to announce the publication of the StarChefs.com Restaurant Trends Report 2011—a collection of the most outstanding, curious, unexpected, and influential developments in the world of food and drink.

As ever, many of our trends are surprising. We had an uptick in the number of Rising Star pastry chefs, but in some of the smaller markets visited, we met fewer actual pastry chefs. We encountered a variety of upscale ethnic concepts, gobbled up shrinking desserts, and tasted what we expect will blossom into an upscale Indian culinary renaissance. And we learned that many chefs (led by some of the greats) are pushing cuisine forward with a kind of culinary historicism—and it’s a topic we’re eager to explore at our 7th Annual StarChefs.com International Chefs Congress: Origins and Frontiers. And restaurateurs, who are squeezed by the economy and a growing number of business costs, are striking back with creative ways to dodge fees and protect their bottom lines."

2 National Association for the Specialty Food Trade: "There was no meat dress from Lady Gaga this year, but raw bacon emerged, USDA replaced the Food Pyramid with a plate; Girl Scouts waved goodbye to palm oil in cookies; and a certain pistachio nut was found to taste like coffee.

These are some of the products, trends and stories that captivated lovers of specialty food this year. They are among the top 20 picks for the most influential food events of 2011 selected by the editors of foodspring.com. foodspring is a website for specialty food enthusiasts produced by the National Association for the Specialty Food Trade (NASFT)."
