If you have beautifully ripe peaches, here is another idea of an interesting way to use them. This recipe was provided by Eddie Matney.
If you live in the Phoenix area, you have probably heard of Eddie Matney. He is a celebrity chef and local treasure here in Arizona. Eddie is the owner of Eddie's House restaurant in Scottsdale. His reputation for incredible food is surely known. We have been featuring several articles about peaches over the last few days and Schnepf Farms gave us a few of Eddie's fantastic recipes featuring peaches. We know you will enjoy them.
Moroccan Seared Halibut with Peach and Jicama Fresca

4 8 Ounce Halibut filets
1 ½ Tablespoon Olive Oil, plus extra for rubbing on fish
Moroccan spice mixture
Salt and pepper, to taste
Rub fish with a little olive oil and season with salt, pepper and Moroccan spice mixture.
Heat pan, add oil and sear fish for 2-3 minutes on each side.
Peach and Jicama Fresca
4 Large peaches (medium diced)
¼ Cup Julienne jicama
2 Tablespoons Red onion (finely diced)
1 Tablespoon Chopped mint
1 Tablespoon Extra virgin olive oil
½ Chopped serrano chili
1 Tablespoon granulated sugar
Juice from 2 limes
Shot Peach schnapps
Salt & Pepper
Combine all ingredients in a bowl and mix well
PRESENTATION
Toss greens with your favorite vinaigrette and place them in the middle of plate. Place halibut over salad and top with Fresca and Enjoy!
