Carnival cruises' warm chocolate melting cake 'secret' recipe revealed

Those of you who have been on a Carnival cruise recently are probably very aware of how divine the chocolate melting cake is for dessert. For those who haven't been on a Carnival cruise, you can now enjoy this classic dessert in your very own home.

The chocolate melting cake used to be either a special order or only served on certain nights on the cruise. The dessert became so popular because of its richness and delicious taste that Carnival has now put it on the menu for dinner every night. Your Charlotte Cruise Ships Examiner has also been known to order two or three of these beauties after a nice dinner, and rightfully so. Once you taste it, you are instantly hooked.

The chocolate melting cake is also vegetarian friendly. As a vegetarian myself, I appreciate this because I can eat it without remorse. But vegans should beware: the melting cake does include eggs and butter. That being said, you can use egg substitute and butter substitute, however, from personal experience, it is not nearly as "good".

According to the new Carnival newsletter, The Funville Times, the recipe for the chocolate melting cake is as follows:

  • 8 ounces of semisweet chocolate
  • 1 cup (2 sticks) of butter
  • 7 eggs, divided use
  • 6 tablespoons of sugar
  • 1/2 cup of flour

Preheat your oven to 375 degrees. Melt the chocolate and butter and cool for 10 minutes. In a separate bowl, mix four eggs with sugar. Whisk. Then add flour and whisk. Add the remaining three eggs and add the egg mixture to the chocolate mixture. Pour this entire mixture into individual ramekins. Bake until just done, about 15-20 minutes (interior will be melting). Serve with vanilla ice cream.

    I made this tonight,20 mins @, 375F, it was overcooked with only a spoonful or so "melting" I will try 10-15 mins next time. It was still good but somehow not as fabulous as I remember from my last cruise.

    You're not alone. A lot of clients that we book on Carnival cruise trips at Cayole Cruises ( www.Cayole.com ) tell us that they eat the chocolate melting cake at every chance they get - at least once a day!

    I missed this the first night of my cruise but had it every other night!! It was a chocoholic's dream come true!! I ate well and took the stairs instead of the elevator and gained 0 pounds!! I'm soooooo excited to have the recipe!!

    Paul - I believe that it will make 8 servings, depending on how large your ramekins are. The last batch we made yielded 6 servings, because ours were larger.

    Jean - I'm not sure. You may have overcooked it. Try it maybe slightly lower temperature and/or time cooked. It could be a trial-and-error based on different ovens - although they should be uniform!! :-) If you have any other troubles, feel free to contact me through email.

    We had this on our cruise it was great. Tried it today at home only needs about 12 minutes. Also trying to find the white chocolate bread pudding from cruise it was just as good. Enjoy!

    I've never been on a cruise so not sure if this is the right recipe, but my niece gave me this recipe with the same name and it is delicious! It's very cinnamony. In fact, it reminded me of a king cake so I now make it and add a filling with cream cheese, blueberry or strawberry pie filling and confectioners' sugar. Kind of a king cake pudding.

    White Chocolate Bread Pudding

    Pudding:

    1 loaf bread
    6 eggs
    2 cups sugar
    2 cups milk
    2 tbls cinnamon
    3 tbls vanilla

    Beat eggs in mixing bowl, then add sugar & mix. Once eggs and sugar are blended, add milk, cinnamon, & vanilla & mix. Tear bread into pieces & mix. (I usually take a whisk and mash it and stir it until mushy & all bread is well soaked.) Pour mixture into greased baking dish and bake at 350 degrees for 1 hour or until top is browned.

    **HINT: If using a glass baking dish, fill a metal baking pan with about 1 inch of water and place glass baking dish inside the pan of water to avoid scorching the bottom of the pudding. If you use an aluminum foil disposable pan, you don't need the pan of water...it doesn't burn in the foil pans!

    White Chocolate Sauce:

    1 cp Nestle' white chocolate morsels
    1 cp heavy whipping cream

    Heat whipping cream until it starts to boil. Remove from fire and add morsels, stirring with whisk until well blended. (Note: You may have to put it back on a low fire to fully melt all morsels.)

    Pour white chocolate sauce over bread pudding.

    I have been on 7 Carnival cruises and I think it's the only dessert I've had on any of them, except when we have a special birthday cake from the coffee shop (chocolate one) which is fantastic. Won't my fellow Carnival cruising buddies be pleasantly surprised to see this dessert sitting in front of them when they come for dinner :)

    This is too funny...my husband got the recipe on the "Behind the Fun Tour" on the Dream. Its different!
    6oz chocolate, 6oz butter, 4 eggs, 6oz sugar and 2oz flour ???
    I made 4 of the 10oz ramekins and cooked at 390F for 15 min. Delish! Turned out perfect but very rich and will make 6oz ramekins next time and reduce baking time significantly.
    On the Transatlantic cruise, our table ordered it several times and sometimes it was perfect with the sauce in the centre and other times it came like a solid cake, too. LOL :O)

    We came home from the Western Caribbean last night after 7 days on the Dream. It was wonderful. I had the melting cake 7 nights in a row. I found that you can ask your waiter for runny, medium or well done. We usually ordered it medium and he hit it every time.

    I have tried 2 times to make the choc. melting cake and the middle is never runny. I even tried baking it for only 10 minutes, still no runnung center. What do I do wromg? No, I don't over whisk.

    we got a totally different recipe as well and i just got home from a crusie on the Carnival Legend.. Does anyone know if it is plain flour or self rising? and my recipe says to cook it at 200degrees for 30 mins

    I have made this twice since my cruise a year ago. It's regular all purpose flour. I've also used cake flour. (Not self rising). Cake flour came out better. I also used Extra Large eggs and baking chocolate, not chocolate chips. Depends on your oven how long and how hot to cook it... i've never made it in my own oven, only my friends.... it's 375 for 15 minutes in their oven. a Water Bath might help.... you definitely want to err on the side of undercooked with this one!

    Just came back from my cruise on the Carnival Pride today. The recipe for this dessert wasn't in the recipe book they sold on the ship, and I swore I was going to look it up as soon as possible! I had this dessert several times throughout the cruise. I tried other desserts but kept coming back to this one! Absolutely Delish!

    My husband also got the recipe on the "Behind the Fun' Tour on the Carnival Pride and it is different that the one listed above. It says...
    6 oz Dark Chocolate
    6 oz Butter
    4 ea Eggs
    6 oz Sugar
    2 oz Flour
    Bake at 390F for 14 minutes
    It also says to make sure the eggs are at room temperature and chocolate is warm enough while making the mixture. Going to try making it tomorrow.
