Often we think of rum in fruity drinks, or chocolate cakes. But coffee and rum combine quite nicely, too, and you can quickly make a simple dessert a bit more elegant. Here’s a very easy recipe for a coffee rum sauce.
For the coffee, try to use a dark roast with caramel undertones, or a lighter roast with berry and/or mocha flavors. Be sure to use a dark rum, which has more body and a more complex flavor profile than light rum.
Drizzle this sauce generously over mocha, vanilla or coffee ice cream, or as a topping for a delicate sponge cake.
Coffee rum sauce
Ingredients:
1 cup strong, fresh-brewed coffee
1 cup sugar
¼ cup of dark rum
½ cup chopped walnuts
Combine coffee and sugar in saucepan over low heat, stirring constantly until it boils. Boil for 3 minutes, then remove from heat. Let mixture cool. Stir in rum and walnuts.
Optional: Serve with unsweetened whipped cream flavored with rum.
