In the spirit of Valentine’s Day, I have dedicated an entire 2 weeks to delicious recipes to make for your valentine. To kick things off this week I have a yummy lemon blueberry pancake recipe perfect for a Valentine’s Day breakfast or brunch with your honey. I’d highly suggest serving these babies with a couple of ice-cold mimosas!
What You Need:
(Makes: 4 servings)
1 & 1/2 cups and additional tablespoon of cake flour, separated
1/4 teaspoon of salt
1 tablespoon of baking powder
3 tablespoons of sugar
1 & 1/2 cups of evaporated milk, (plus more if needed)
Juice of 1 whole lemon (plus more if needed)
1 large egg
1 & 1/2 teaspoon of vanilla
2 tablespoons of butter, melted
Zest from 1 lemon
1 cup of blueberries
Extra butter for serving
Maple syrup for serving
What to Do:
STEP 1) Heat a heavy skillet or grill over medium low heat.
STEP 2) In a medium bowl, mix the flour, salt, baking powder, and sugar. Set aside.
STEP 3) In a separate bowl, mix the evaporated milk, juice of 1 lemon (more if lemon isn’t very juicy), and lemon zest. Allow to sit for five minutes and then add egg, vanilla, and melted butter. Mix to combine.
STEP 4) Pour wet mixture into the dry ingredients. Stir gently to combine. Add in more evaporated milk if mixture is overly thick. Stir in blueberries. Again, check to make sure mixture isn’t overly thick.
STEP 5) Melt the butter in heated skillet. Drop batter by 1/4 cup measures and fry pancakes on both sides until golden. Serve with softened butter and warm maple syrup.
