This is a super easy recipe that is so simple to throw together. We have this several times a month, and it's really easy to change it up. Just change the kind of soup you use in the sauce.
Recipe:
4 boneless pork chops, trimmed of fat
2-3 potatoes, peeled and sliced thinly
1 cup fresh mushrooms, chopped
cream of mushroom/chicken/celery soup (pick one!)
1/2 cup sour cream
1/4 cup water
2 Tablespoon dried onion
Method:
Thinly slice the potatoes and layer them in a 9" casserole dish. Place the pork chops and mushrooms over the potatoes.
Mix the soup, sour cream and water together. Pour over the pork chops. Top with the dried onion. Cover with aluminum foil and bake at 375-degrees for 1 hour. After an hour of cooking, remove the foil and bake an additional 15 minutes, or until the top is golden and bubbly. Serve immediately!
