Every day is a day to celebrate something. Oct. 21 is National Pumpkin Cheesecake Day.
A cheesecake is a sweet dish consisting of two or more layers. The main, or thickest layer, consists of a mixture of soft, fresh cheese, eggs, and sugar; the bottom layer is often a crust or base made from crushed cookies, graham crackers, pastry, or sponge cake.
A cheesecake may be baked or unbaked. Cheesecake is usually sweetened with sugar and may be flavored or topped with fruit, whipped cream, nuts, fruit sauce, and/or chocolate syrup.
This time of year, you will see festive pumpkin-flavored treats are everywhere. Pumpkins are found in treats such as:

- pumpkin pancakes
- pumpkin soup
- pumpkin beer
- pumpkin coffee
- pumpkin bread
- pumpkin muffins
- pumpkin cookies
- pumpkin cheesecake
If you have ever eaten pumpkin cheesecake, you will know that it is traditionally made with a graham cracker crust and a pumpkin purée cheesecake filling.
Cheesecakes have been popular since 2000 BC. Today there are hundreds of variations of cheesecakes all over the world.
