Recognized by CNNGO.com, they named the NCBS BBQ Boot Camps one of ten Great International Cooking Classes (the only one in the USA).Each year, over the period of late spring and early fall, the North Carolina Barbecue Society runs three intensive BBQ boot camps which includes:

  • Instruction from North Carolina's Premiere Pit Masters & Chefs
  • Whole hog, shoulders, chicken, ribs, brisket, tenderloin, prime rib, beef steak, fish & Brunswick stew
  • BBQ dips & rubs, various side dishes and desserts
  • Jim Early's award-winning Pimento Cheese & other dishes
  • Quality of Life Seminar-14 Steps to Balance
  • NCBS Cooking School Diploma & NCBS Certified BBQ Judge Certificate

NCBS secures the services of North Carolina’s premier Pit Masters plus Chef(s) to instruct their classes. They teach the campers to cook whole hogs eastern NC style, shoulders and Boston butts western NC style, chicken, pork ribs, beef brisket, pork tenderloin, beef prime rib and whole wild fish. Campers are also instructed how to make eastern NC vinegar based sauce and Lexington style BBQ dip and rubs along with side dishes such as collards, baked beans, banana pudding etc.

Each camper receives a diploma signed by NCBS officers/Pit Masters/Chefs. Each camper receives a certificate as an NCBS Certified Judge signed by NCBS Officers/Pit Masters/Chefs.

Members of NCBS, North Carolina Barbecue Society have preference for spots in the boot camps although membership is minimal for a year, only $35 with significant discounts to students, seniors and military. The next two NCBS Boot Camps are July 18 & 19 at Sugar Mountain Resort and September 26 & 27 in Castle Hayne, NC. Accommodations are not inclusive. NCBS will have discounted blocks of rooms for each camp.

The North Carolina Barbecue Society (NCBS) is a nonprofit organization that was created to preserve the heritage, traditions, recipes, and cooking techniques that set North Carolina Barbecue apart from the Barbecue of other states.
