Whether you make broiled lobster tails, baked stuffed or steamed lobster tails, they are easy to make and a holiday favorite for seafood lovers. If you have a large pot, can boil water and have lobster tails, you're on your way to a delicious meal to ring in 2011.
Here in Rhode Island, seafood is easy to find fresh at the docks in Narragansett. However, if you haven't purchased them yet, you may have to wait to buy them at a local supermarket such as Shaw's on New Year's day. Most stores and fish markets closed early on New Year's Eve.

Take a pair of kitchen shears and hold the lobster tail in your hand. Begin cutting down one side of the lobster tail as close to the side as you can. Repeat a cut down the other side of the lobster tail. Cut the shell across the middle at the base of the tail.Grab the top of the shell and peel back. Take a knife and cut around the lobster meat. This will make it easy to remove the meat from the shell once the lobster is done.
Prepare lobster marinade of 3 Tablespoons of lemon juice and clarified butter, with a pinch of paprika, white pepper, garlic power and salt. Drizzle lobster marinade over lobster tail. Place lobster tail on a sheet of aluminum foil. Fold up the ends of the foil so your lobster tail is completely sealed. Bake lobster tail according to the chart below in a 450 degree preheated oven. Wrap tail in foil and bake in 450 degree oven
A 12 oz tail should bake for approximately 30 minutes.
How to make a broiled lobster tail according to Lobsterhelp.com
Set oven to a medium broil - 500 degrees
Begin with creating a lobster marinade. This is a combination of a half stick of clarified butter, 1 tsp of lemon juice, a 1/4 tsp of white pepper, a 1/4 tsp of sea salt and a 1/4 tsp of garlic powder. Mix together and set aside. Take kitchen sheers and begin on right side of the shell. Keep bottom of the sheers as close to the top underside of the shell as possible. You do NOT want to cut too deep into the lobster tail. Repeat Process on other side. Make a cut across the back to free the top of the shell.
Grab the cut piece of shell and peel it backwards. Wash the tail with cold water as to remove any bits of shells and pat dry. Drizzle the lobster tail with the marinade prepared earlier and place into pan. Insert into oven and broil according to times below. With oven preheated to the "broil" setting, cook tails about 1 minute per ounce of lobster tail
The lobster tails are done when the internal temperature reaches 145 degrees.
