No time to bake? Use a boxed cake mix or buy pre-made cupcakes at your local bakery or grocery store. Call ahead and ask for a batch of un-frosted cupcakes -- most bakeries and even supermarket bakeries will do this for you.

Best Chocolate Cupcake Recipe (pre-heat over to 350 degrees)

  • 1 cup all-purpose flour
  • 6 tablespoons natural unsweetened cocoa 
  • 1/2 teaspoon baking soda
  • 1 cup sugar
  • 2 large whole eggs, at room temperature
  • 1 large egg yolk, at room temperature
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 tablespoons unsalted butter, softened 
  • 1/2 cup water

Directions

  • Line cupcake/muffin tins with paper liners (this recipe makes approximately 12 cupcakes)
  • Blend the flour with the cocoa powder, baking soda, baking powder, and salt in a medium bowl
  • Using an electric mixer at medium speed beat butter --  about 2 minutes.
  • Gradually add the sugar. Beat until li smooth -- about 5 minutes.
  • Reduce the mixer speed to low and beat in the whole eggs and yolk 1 at a time.
  • Beat in the vanilla. 
  • Bring water just to a boil in a small saucepan and remove from the heat.
  • Set the mixer at low speed and beat the flour mixture into the butter mixture a little at a time.
  • Add hot water, about 2 tablespoons at a time, and mix until batter is smooth.
  • Divide the batter among the cups in the cupcake/muffin tin.
  • Fill about 2/3 full.
  • Bake approximately 20 minutes.

Cool the cupcakes in the cupcake tin on a rack for 10 minutes. Remove from the tin and cool completely before frosting.
