Enjoy the Super Bowl with these lucky Greek nachos

The Super Bowl is almost upon us -- the greatest day in football, commercials, and snack food. Despite all the superstition, we unfortunately are unable to control either the outcome of the game or the absurdity of the expensive advertising; we can, however, happily control the food. Try a little something outside the box with this recipe for Lucky Greek Nachos.

These nachos are a fun alternative to the standard variety. Instead of meat, sour cream, guacamole and the traditional Mexican accoutrements, these Lucky Greek Nachos are comparatively much lighter and fresher. First, begin with pita chips instead of tortilla chips -- and, given the option, spring for the flavored variety like parmesan garlic for extra oomph. Top these pita chips with mozzarella cheese, tasty hummus, sliced olives, tomatoes, red onion, and cucumber. These toppings may be unconventional, but they will positively win you over!

Nachos are a fantastic finger food for a crowd, being casual in style and preparation. You can whip these up in no time before the game or during halftime. Whether the Broncos or the Seahawks win the 2014 Super Bowl, you'll be a winner with these Lucky Greek Nachos!

Ingredients:

  • 1 package pita chips
  • 1 container roasted pepper hummus, room temperature
  • 1 cup mozzarella, shredded
  • 1 large tomato, diced
  • 1/2 cucumber, peeled and diced
  • 1/4 red onion, minced
  • 1 (2.25-oz) can sliced olives

Directions:

Preheat oven to 325 degrees. Line a medium-sized baking dish evenly with pita chips.

Spread the cheese over the pita chips. (If desired, reserve a portion of the cheese for a final garnish.) Spread the hummus across the chips with a spoon or spatula. Next, distribute the tomatoes, red onion, cucumber and olives across everything.

Bake for around seven minutes, until dish is warmed and cheese has melted.
