I think I was Italian in another life. I adore everything Italian, including this classic dessert. Tiramisu is traditionally made with ladyfingers and marscapone cheese, but my not-so-classic recipe calls for easier-to-find alternatives: store bought pound cake and cream cheese.
Easy Tiramisu
- 2 cups heavy whipping cream
- 1 cup white sugar
- 1/2 cup Kahlua
- 1 (8 ounce) package cream cheese
- 1 (10.75 ounce) package frozen prepared pound cake, thawed and cut into 10 slices
- 1 cup strong brewed coffee
- 2 (1.4 ounce) bars chocolate covered English toffee, chopped
Whip the cream to stiff peaks. In another large bowl, beat sugar, Kahlua, and cream cheese with an electric mixer. Fold in whipped cream.
Arrange half of the cake slices on bottom of a trifle dish, cutting cake slices if necessary to fit them in. Sprinkle 1/2 of the coffee on the cake. If you have an empty water bottle, pour the coffee in it and partially cover the mouth with your thumb to slow the flow as you pour. Spread half the cream mixture over the cake. Sprinkle with chopped toffee.
Repeat the layers: cake, coffee, cream, toffee. (Say that ten times fast!)
Cover and refrigerate for at least 1 hour to allow all the layers to get friendly. Try not to eat the whole thing in one sitting.
Kick it up: Replace some of the coffee with Kahlua.
Dress it up: Drizzle chocolate sauce on top. I always have the kind for chocolate milk on hand in my fridge.

Oh, blame it on my manager. He wanted recipes for the summer cookbook. I can't help it if coffee doesn't appear much in main dishes or salads!
