Cranberry coffee cake recipe

Thanksgiving is a week away and home cooks all over the country are scrambling to find the perfect recipes to serve their friends and family. Here is an old family favorite that is a delicious way to start your Thanksgiving celebrations. If making breakfast on Thanksgiving Day is too much to tackle while making your family feast, consider making this a couple of days ahead and freezing it. Simply thaw the night before and warm in the oven for a few minutes, if desired, before serving.

CRANBERRY COFFEE CAKE

Ingredients

Streusel Topping

  • 1/3 cup flour

  • 1/3 cup sugar

  • 1/2 teaspoon ground cinnamon

  • 1/4 cup butter, cut into pieces

Cake Batter

  • 1 cup flour

  • 1 teaspoon baking powder

  • 1/8 teaspoon salt

  • 1/4 cup butter, room temperature

  • 1/2 cup sugar

  • 1 egg

  • 1/2 teaspoon vanilla extract

  • zest of one orange

  • 1/3 cup milk

  • 2 cups fresh cranberries

Directions

Preheat oven to 350 degrees F. Spray an 8X8 pan with non-stick cooking spray and set aside. To make the topping, mix together flour, sugar and cinnamon. Cut in cold butter with a fork or pastry blender until the mixture resembles coarse crumbs. In another bowl, sift together flour, baking powder and salt. Set aside. In a third bowl, beat butter until smooth. Gradually add sugar and beat until light and fluffy. Add the egg, vanilla and orange zest then beat until well combined. Stir in flour mixture and milk, alternating between the two. Mix until just blended. Pour into bottom of prepared pan. Top batter with fresh berries and sprinkle with streusel topping. Bake 40-50 minutes. The coffeecake is done when a toothpick inserted into the center of the cake comes out clean.

Cook's Notes

  • If cranberries aren't your thing, substitute an equal amount of other fresh berries that you do enjoy, such as blueberries, blackberries or raspberries. You can leave out the orange zest or substitute it with lemon zest, if your tastebuds prefer.
