A carnitas taco & an adobada taco at Tacos El Asadero

When I packed up and left my home state of California four years ago, I expected to miss my friends and family. But I didn't know how tough it would be to leave my sweet taco trucks behind. Don't worry, I will spare you that same old “There's no good Mexican food in Seattle, I'm from California and I know!” speech, and focus on the positive: there is a place to get incredible tacos in Seattle!


Tacos El Asadero
is far more awesome than your average taco truck, because it is actually a taco bus. The white, vintage bus has been hollowed out, fitted with counters and stools, and wallpapered with colorful photos of the fine Mexican food prepared in the back end of the bus.


There are burritos, quesadillas, mulitas, tamales and other standard truck fare, but I come for the tacos. For a buck twenty a pop, why not order up a gaggle, and sample the entire mosaic of meat available from the bus' small kitchen? A slave to the swine, I am a loyal to the carnitas, adobada and al pastor.


The folks at Tacos El Asadero assemble their tacos with a generous hand. The two-tortilla treats are absolutely overflowing with super flavorful, marinated meat, onion, cilantro and a squirt of suitably spicy salsa. A trip to the condiment bar means wedges of lime, cool, crisp radishes, whole pickled jalapenos and those addictive, spicy pickled carrots that you will crunch on while you wait for your order.


Upon biting into the meaty mess, you might cry a tear of Tapatio. It's that good. No trip to California required
