Those of us living in California, or other warm climates can still enjoy milk shakes and ice cream.  And there are those of us who do enjoy these cold treats even during the  coldest days of the year!

Here's a fast pumpkin pie flavored milk shake you'll want to make lickity-split.  All it takes is a blender, or even just a pitcher with a tight-fitting lid if the ice cream is already softened.

Pumpkin Pie Milk Shake Recipe
and diet variation*

Total Time: 5 minutes
Makes: 4 servings, about 1 1/4 cup each

4 cups milk
1 pkg. (3.4 oz.) butterscotch instant pudding
1/2 cup vanilla ice cream, softened
1 tsp. pumpkin pie spice

Pour in milk first, and add all ingredients in the blender or large pitcher with tight-fitting lid; cover.  Give it a whirl until well blended, or shake in the pitcher for about 1 minute.

Serve immediately.  Milk shake will thicken as it stands. Thin with additional milk, if desired.

TIP: If pumpkin pie spice is not available, substiture with cinnamon and nutmeg.

*Diet Variation
On a diet?  You can still enjoy an occasional milk shake with these tips.
Prepare using fat-free milk, and substite frozen low-fat vanilla yogurt for the ice cream.  Use moderation by serving yourself in a smaller glass.

Chef Luchetti's Easy Walnut Maple Cookie Recipe

"Walnuts are an oilier nut but still not as strong or dominating as a pecan.  I like to combine walnuts with maple in desserts.  They work with apples as well as pears or quince,"  Luchetti said in "The Flavor Bible" by Karen Page and Andrew Dornenburg.
