Do you know the muffin method? This mixing method is an easy technique that creates delicious muffins with a perfect crumb.

The Muffin Method
The muffin method uses two bowls so the finished batter does not get overworked. Begin by placing the flour, spices, and leaveners (baking soda or baking powder) in a large bowl. Some muffin recipes call for sifting the dry ingredients together, but that is not necessary. Use a whisk to thoroughly combine these ingredients.

Combine the sugar and wet ingredients, such as extract, milk, eggs, melted butter and vegetable oil in a separate bowl. Stir thoroughly.

Make a well in the dry mixture and add the wet ingredients. Gently stir the muffin batter just until no large pockets of flour remain. A wooden spoon or silicone spatula works well. The batter should be somewhat lumpy.
