This is where it all begins

If you're looking for baking ideas on these cool and colorful fall days, there are few better ingredients to fall back on than chocolate. Some of us think it belongs in practically anything; certainly it belongs in lots and lots of baked goods. And yet it has only been available, freed of its heavy fat content and conveniently processed for baking (and eating), since the 19th century. Aren't you glad, as the Reverend Sydney Smith said of tea, that you weren't "born before chocolate"?
