So I promised some fabulous comfort food recipes to help you get through the tough times, but still making sure your diet is healthy and delicious. Here is how I am changing my diet and I hope these help you to do the same.
Mashed potatoes are delicious, satisfying and comforting, but in the interests of eating healthily, it's important to fill yourself up with more nutritious vegetables. One way of doing that is to mix your potatoes with vegetables that will give them more health pizzaz!
Mash half the amount of potatoes you would normally eat and mix them with cooked and mashed veggies such as brocolli, turnip, carrots and yams. Another option is to forego the potato altogether and cook cauliflower slightly longer than you would normally and mash as if they were potatoes. The flavor is fantasic and they dont make you nearly as sleepy.
Combining slightly overcooked vegetables also make a great mash substitute; carrots and rutabaga, cauliflower and brocolli, carrots and parsnips, yams and rutabaga and beets and sweet potato. You might want to experiment with your favorite vegetables, just season them suitably and enjoy!
