Tucked away behind the hustle and bustle of Williamsburg streets is a BBQ joint called Fette Sau. This magical world of meat is housed in a pretty big open space filled with picnic tables with a bar at the back. On busy fall and winter nights, this magical world of meat greets you with a humid wave of air that is thick with the smell of smoked meat. Customers of the female persuasion will notice that their hair smells like meat long after they've left Fette Sau.

If this sounds like your kind of place, head over to 354 Metropolitan Ave between Havemeyer and Roebling Streets in Williamsburg, Brooklyn. Fette Sau is only open from 5pm until 2am, but the full menu closes down at 11pm. After that, patrons can get a mean pulled pork sandwich at the bar, but can't enjoy the full meaty menu with their drinks. Feeling thirsty? Take on the half or full gallons of craft beer -- just remember to bring some friends, because that feat is best tackled en masse.

As for the food, the menu changes regularly because the meat comes from small farms that cannot guarantee the same cuts day after day. Customers at Fette Sau must roll with it and check the sign boards for the daily meats. Some favorites are the pulled pork, brisket, spicy sausage, and of course, ribs. Sometimes there is lamb, and other times there are pork chops. While all choices may not be available on any given day, your stomach will not be disappointed.

Fette Sau smokes with a blend of different woods: red and white oak, maple, beach, and cherry. They also dry rub their BBQ, and inform customers that this is all the meat needs to be delicious. For those who are sauce-inclined, there are three varieties laid out on the table. One sweet, one spicy, and one very vinegar-y. It doesn't matter how you dress your meat, because it's delicious all ways -- this BBQ is sure to be some of the best you've ever tasted. Enjoy!
