Homemade Tomato Salsa

This homemade tomato salsa recipe is an easy, and delicious, way to use up all the tomatoes that are in abundance now locally. Homemade salsa is different from the store-bought kind. It's filled with bites of fresh veggies, packed with flavor, and not as sauce-like as the jarred variety. This recipe uses cucumbers rather than tomatillos to take further advantage of local farmer's market finds. This is the real deal, and should be taken full advantage of while the season is in its prime. There will be plenty of time to revert to the other stuff when winter hits. Serve with warm tortilla chips, fajitas or inside baked chicken breasts.

Homemade tomato salsa recipe

  • 5 ripe tomatoes, chopped
  • 1 small onion, chopped
  • 1/2 medium cucumber, chopped
  • 1 jalapeno pepper, diced (or other hot pepper)
  • 1 garlic clove, diced
  • 1 handful fresh cilantro, chopped
  • 1/2 lime
  • Salt and pepper

Combine all veggies and cilantro in a bowl, squeeze lime juice over and season with salt and pepper. Mix well and taste. Let marinate for about 30 minutes at room temperature, then strain out excess liquid in a colander set over a bowl in the refrigerator. Serve cold with hot tortilla chips.
