Combine all veggies and cilantro in a bowl, squeeze lime juice over and season with salt and pepper. Mix well and taste. Let marinate for about 30 minutes at room temperature, then strain out excess liquid in a colander set over a bowl in the refrigerator. Serve cold with hot tortilla chips.
