These frozen watermelon pops are a great way to get kids to enjoy eating fruit, and an ingenious trick for adults looking for a low-calorie treat. Take this basic recipe and redesign it according to ingredients on hand or personal preference. A trip to the store for cups and popsicle sticks is necessary, but once the kitchen is stocked, a homemade treat can be ready in a jiffy. Nothing says summer quite like watermelon.

Frozen watermelon blueberry pops recipe

Makes about 8 pops

Ingredients:

  • 2 cups seedless watermelon
  • 1/4 cup sugar
  • 1 cup blueberries
  • Paper Dixie cups (about 8)
  • Aluminum foil
  • Popsicle sticks (about 8)

Directions:

Scoop watermelon into blender or food processor. Add sugar and berries. Process or blend until smooth. Pour into Dixie cups. Top each up with a piece of foil just big enough to reach over edges of cup. Push a popsicle stick through the center of foil about halfway down into the watermelon mixture. Freeze about 2-3 hours or until solid. To serve, remove foil and peel off paper cup.
