Ever really want to have dinner out of the way in the morning? This is one of my favorite recipes to make for days that don't allow for dinner prep time in the evening. I've been making this since my mother-in-law gave me the secret recipe (Ooops, it's out now) even before my low-carb lifestyle days.
Crock Pot Roast Beef
Ingredients:
-Boneless chuck roast or whichever variety you prefer (my preference is whatever's on sale)
-2 envelopes of Lipton Onion Soup Mix
-1 small onion, diced
-Raw cauliflower, chunked into peices
-Pepper
Pour the soup mixes into a small bowl and mix with enough water to pour (doesn't take much). It will be gunky and gross looking, but I promise it's delicious. Place cauliflower in the crockpot first, and then place the roast fat-side-up right on top of the cauliflower (counter-intuitive, I know- the cauliflower under raw meat, not the fat-side-up thing). Pour the soup gunk over the top and then spread the mess around the top so that the roast is covered. Add the chopped onion on top of this, along with a generous amount of pepper. I love to also add sliced green peppers. Cook on low for 8-10 hours until tender and falls apart with a fork. Pour the juices over the top of this to serve with some quick veggies. Delicious!
