Mother's Day brunch part two (recipe): do-ahead sausage and egg casserole
Recipes that can be prepared the night before make holidays so much more pleasant for the cook. This is another make-ahead treat your family will love. Once again, it’s pretty easy to make, so even if you're not accustomed to whipping up a special breakfast, don’t be afraid to get in the kitchen and make Mom proud this Mother's Day.
Ingredients:
- 1 package of regular flavor pork sausage
- 10 eggs, lightly beaten
- 3 cups milk
- 2 teaspoons dry (ground) mustard
- 1 teaspoon salt
- 6 cups of cubed or torn bread
- 2 cups of sharp cheddar cheese
- ½ teaspoon black pepper
- ½ cup sliced green onions—about eight
Directions:
- Preheat the oven to 325º Fahrenheit.
- Cook the sausage in a large skillet over medium-high heat until the meat is cooked thoroughly (no longer pink in the center).
- In a large mixing bowl combine the eggs, milk, ground mustard, and salt. Stir well.
- Prepare a 13 x 9 x 2 baking dish with butter or shortening.
- Spread half of the bread evenly in the prepared baking dish.
- Sprinkle the bread with half of the pepper (½ teaspoon), half of the cheese, half of the cooked sausage, and half of the green onions
- Repeat with another of layer of bread, pepper, cheese, sausage, and onions.
- Pour the egg mixture evenly over the casserole.
- Bake uncovered for 55-60 minutes or until the eggs are set.
- Tent with foil if the top browns too quickly.
If you’d like to make this casserole the night before:
- Follow steps two through eight as outlined above.
- Cover and refrigerate until ready to cook.
- When you’re ready to cook the casserole, preheat the oven to 325º Fahrenheit.
- Bake uncovered for 55-60 minutes or until the eggs are set.
- Tent with foil if the top browns too quickly.
