Recipes that can be prepared the night before make holidays so much more pleasant for the cook. This is another make-ahead treat your family will love. Once again, it’s pretty easy to make, so even if you're not accustomed to whipping up a special breakfast, don’t be afraid to get in the kitchen and make Mom proud this Mother's Day.

Ingredients:

  • 1 package of regular flavor pork sausage
  • 10 eggs, lightly beaten
  • 3 cups milk
  • 2 teaspoons dry (ground) mustard
  • 1 teaspoon salt
  • 6 cups of cubed or torn bread
  • 2 cups of sharp cheddar cheese
  • ½ teaspoon black pepper
  • ½ cup sliced green onions—about eight

Directions:

  1. Preheat the oven to 325º Fahrenheit.
  2. Cook the sausage in a large skillet over medium-high heat until the meat is cooked thoroughly (no longer pink in the center).
  3. In a large mixing bowl combine the eggs, milk, ground mustard, and salt. Stir well.
  4. Prepare a 13 x 9 x 2 baking dish with butter or shortening.
  5. Spread half of the bread evenly in the prepared baking dish.
  6. Sprinkle the bread with half of the pepper (½ teaspoon), half of the cheese, half of the cooked sausage, and half of the green onions
  7. Repeat with another of layer of bread, pepper, cheese, sausage, and onions.
  8. Pour the egg mixture evenly over the casserole.
  9. Bake uncovered for 55-60 minutes or until the eggs are set.
  10. Tent with foil if the top browns too quickly.

If you’d like to make this casserole the night before:

  1. Follow steps two through eight as outlined above.
  2. Cover and refrigerate until ready to cook.
  3. When you’re ready to cook the casserole, preheat the oven to 325º Fahrenheit.
  4. Bake uncovered for 55-60 minutes or until the eggs are set.
  5. Tent with foil if the top browns too quickly.

Don't miss parts one (yummy potato bake casserole), three (blueberry french toast casserole), and four (honey-lime fresh fruit salad with mint and toasted almond).
