Mother's Day brunch part one (recipe): yummy potato bake casserole

Luckily, the recipe does not require heart-shaped potatoes, but it’s one that your entire family will love. In fact, this potato casserole is a family favorite and a must-have at every brunch we host. Aside from how delicious it tastes is the fact that you can easily make it the night before, both assets that make this bubbly casserole as popular with its tasters as it is with its cook.  Yes, this recipe is scrumptious and easy to make, so don those aprons, Dads.  Let's get cooking.

Yummy Potato Bake Casserole

Ingredients:

  • 8 ounces of sour cream (Using light doesn’t affect the taste at all.)
  • ½ cup milk
  • 1 can (10 ¾ ounces) condensed cream of mushroom soup
  • 1 can (10 ¾ ounces) condensed cream of chicken soup
  • ¼ teaspoon pepper
  • 8 green onions, sliced
  • One 30 ounce bag of frozen shredded hash brown potatoes, defrosted
  • 1 cup shredded cheddar cheese


Directions:

  1. Preheat the oven to 350º Fahrenheit.
  2. Use a bit of butter or shortening to grease the sides and the bottom of a 13 x 9 x 2 baking dish.
  3. Mix all the sour cream, milk, both cans of soup, and pepper in a very large mixing bowl until the ingredients are blended well.
  4. Add the sliced green onions and mix evenly.
  5. Add the entire bag of shredded hash browns and mix.
  6. Pour the bowl’s contents into the prepared baking dish.
  7. Cook the casserole for thirty minutes and then add the shredded cheddar cheese.
  8. Continue cooking for another ten to fifteen minutes or until the cheese is melted and bubbly.


If you’d like to make this casserole the night before:

  1. Follow steps two through five as outlined above.
  2. Cover and refrigerate until ready to cook.
  3. When you’re ready to cook the casserole, preheat the oven to 350º Fahrenheit.
  4. Bake the casserole for forty minutes.
  5. Sprinkle the cheese on top and cook for an additional ten to fifteen minutes.


Variation:

For brunch on Christmas morning, I add chopped green and red peppers to make the casserole a more festive red and green.
