Simple Turkey Gravy Recipe for Thanksgiving- A simple and easy to make gravy recipe that can be made ahead of time, or before your meal.

Ingredients

- Pre-cut bone-in turkey pieces (any kind will do)

- 2 medium yellow onions, chopped

- 1 cup of water

- 2 quarts of low sodium chicken broth, divided

- 2 cloves chopped garlic

- 1 tablespoon of olive oil

- 4 sprigs fresh thyme leaves, removed from stem

- 1 tablespoon of fresh chopped parsley

- 3/4 cup all-purpose flour

- 2 tablespoons of unsalted butter

- Kosher salt

- Fresh ground black pepper

Directions

Preheat oven to 400 degrees

Heat oil in a sauté pan over medium-high heat. Place turkey pieces in pan and brown on each side, approximately three minutes per side. Remove turkey pieces and place in roasting pan. Add onion and garlic to pan, and sauté until translucent, careful not to burn the garlic. Add onions and garlic over the top of turkey pieces. Set sauté pan aside, you will use this later. Place in pre-heated oven and bake for about 1 hour.

Place turkey and onion mixture into a 5 quart pot. Place sauté pan back over medium heat and add water. Scrape pan to bring up brown bits from bottom. Pour water into the stockpot. Stir in 1 quart of chicken broth and thyme leaves. Bring to a boil, then reduce heat and simmer uncovered for 1 hour.

Remove turkey pieces from the stockpot and allow to cool. Once cool remove and throw out the skin. Remove the meat, wrap in foil, place in a freezer bag,and save for another time. Pour the contents of the stockpot through a strainer into a large saucepan. Skim off the fat and bring to a boil.

Whisk the flour and remaining 1 quart of broth in a mixing bowl. The mixture should be smooth. Slowly whisk this mixture into the simmering broth. Continue to simmer until the gravy thickens. Stir in the butter until it melts. Turn off heat, add kosher salt and fresh ground pepper to taste, and stir in parsley leaves. You may serve this immediately or refrigerate for later use. This will also remain good in an airtight container in the freezer for three months.

*Cooks note- You can substitute chicken pieces to make chicken gravy.
