A luscious glaze adds pizazz to severely healthy vegetables. 

Who is it that said to make a vegetable better, just add sugar?  Oh, that must have been me!  And this recipe for Sweet Caramelized Brussels Sprouts proves the theory.  The bitter taste of Brussels sprouts is countered by the luscious sweetness of caramelized brown sugar with a tempering of vinegar.  This is the recipe for people who say they do not like Brussels sprouts. 

A shallow pan (Dutch oven or skillet) with a lid works best when preparing this sweet Brussels sprouts recipe.

Sweet Caramelized Brussels Sprouts Recipe

Ingredients:

1 pound Brussels sprouts

1/4 cup brown sugar

2 tbsp. butter or substitute such as Healthy Choice 50/50

1/4 cup balsamic or red wine vinegar  

1/3 cup water

1/4 tsp. salt

Directions:

Prepare the Brussels sprouts by peeling off 3 or 4 of the dark outer leaves and trimming stems.

Heat the sugar over medium high heat, shaking pan occasionally.  When the sugar begins to melt, add butter.  Stir until butter is melted then add vinegar.  Cook and stir for 1 minute.

Add the water and salt.  Bring to a boil and add the Brussels sprouts.  Return to boiling and reduce heat to simmer for 6 minutes, covered.  Remove cover and simmer for 20 minutes more, stirring occasionally, until liquid has become syrupy and sprouts are coated with glaze.  

Caramelized Brussels sprouts will be very hot when done - let sit for a few minutes before serving.
