Fresh strawberries with cheesecake crepes

Making a deliciously healthy low-carb dessert that is both decadent and tastes great even for people who aren’t livin’ la vida low-carb can sometimes be difficult to accomplish. I know I’ve made sugar-free, low-carb recipes for people before and they’ve turned their noses up at it after just one bite. You can’t win ‘em all, I suppose. But something tells me this recipe I’m sharing today will be a hit with anyone who puts it in their mouth!  

Once again our friends from Low-Carb Connoisseur have come up with a simple, yet elegant low-carb dessert recipe that includes fresh strawberries, low-carb cheesecake, and French crepes. It’s one of those dessert dishes that looks all fancy schmancy, so you can WOW your guests with a great-looking display while serving them something a whole heckuva lot healthier than the sugary carbage their accustomed to eating after a meal. Make this one for your family and friends and dazzle them with your culinary excellence!

 

STRAWBERRY CHEESECAKE LOW-CARB FRENCH CREPES

Topping:
1/2 cup Ideal Xylitol Sweetener or favorite sugar substitute
1 1/2 cups fresh strawberries–washed and sliced
4 Tablespoons DaVinci Sugar Free Strawberry Syrup

Filling:
1 cup fresh strawberries–washed and sliced
8 ounces softened cream cheese
1/4 cup Ideal Xylitol Sweetener or favorite sugar substitute
1/2 tsp fresh lemon juice
1 teaspoon Singing Dog Vanilla Extract

Crepes: Use Dixie Low Carb French Crepe Mix–follow directions for making six crepes.

Topping: Stir sweetener, berries, and syrup together until well blended. Set aside.

Filling: Blend sweetener, cream cheese, lemon juice, and vanilla extract with hand mixer on medium until smooth and fluffy. Fold in berries.

Put desired amount of filling in the crepe and roll up. Top with sauce.

Makes 6 servings. About 3.5g carbs per serving.
