 French breakfast radishes with garden cress on a buttered baguette

Though members of the horseradish family, French breakfast radishes are milder than most spring or summer radishes.  Garden cress (also known as peppergrass) is a member of the mustard family and adds a slightly spicy flavor to this dish. Both radishes and garden cress are in season in south eastern PA gardens this week, if you aren't growing radishes or garden cress in your garden, you can buy these items fresh at local farm stands or farmer's markets.

Yield: Makes 12

Ingredients:

  • baguettes (sliced in 1/2 and cut into 3 sections)
  • 1/4 cup unsalted butter, room temperature
  • Salt (Celtic sea salt imparts a nice flavor)
  • 1 bunch garden cress, washed and  trimmed
  • 12 french breakfast radishes, washed, and sliced thin

 
Spread butter over bread slices, and sprinkle with salt.  Place garden cress sprigs atop buttered bread, spread a thin layer of butter on1 side of each radish slice, then place radish slices atop watercress with the buttered side down.  Served best at room temperature.
