For diabetics, avocados are one of the best fruits you can eat - on a daily basis! Loaded with healthy fats and packed with vitamins, minerals and powerful antioxidants, this low carbohydrate heart-happy fruit is a definite must-have on your weekly grocery list!

How to pick the perfect avocado? Hold the fruit in the palm of your hand and squeeze gently. Ripe avocados will still be firm, but will also yield slightly to the  gentle pressure of your hand. If it is squishy, it's no good! If it's as hard as a rock, then it will be ripe in a few more days. Another quick tip to check the ripeness of your avocado is to use your thumb and press gently on the top where the stem meets the fruit. If it pushes in too far and dents the top of the avocado, it's over-ripened. You want the stem to push in just a little bit, but still retain its firmness. Avocados are great additions or "toppers" to many meals including salads, tacos, burritos, subs, burgers, or pretty much anything! A classic avocado favorite however, is fresh guacamole dip. Served with whole-wheat or multi-grain crackers, tortillas, pitas, or even as a baby carrot dip, guacamole is the perfect low-carb springtime snack or appetizer, and it's quick and easy to make! Here's what you'll need:

  • 2 ripe avocados
  • 2 roma tomatoes (finely chopped)
  • 2 scallions (finely chopped)
  • 1 minced garlic clove (or 1 tsp. pre-minced or granulated garlic)
  • 1-2 tbsp. lemon or lime juice
  • 1 tbsp. chopped fresh cilantro (or 1 tsp. dried cilantro)
  • fresh ground pepper and a pinch of salt
  • 2 tbsp. fat-free all-natural sour cream (optional)

 
 
 
 

First, slice your avocado in half and remove the pit with a knife. Scoop out the green flesh with a spoon and mash with a fork in a medium-sized bowl. Add remaining ingredients and mix well. Season with salt and pepper, and garnish with sprigs of fresh cilantro. If using a food processor, first process garlic on chop then add scallions and cilantro. Slice the avocado into quarters and add to processor, pulsing on chop 5-10 times. Add remaining ingredients and pulse on chop another 5-10 times until well blended. Scoop into serving bowl and voila! Quick and easy fresh homemade guacamole dip! (serves 4) Enjoy on a sunny spring afternoon with a glass of fresh-brewed iced green tea (unsweetened, of course!).
