What to do with leftover wine

Leftover wine? If you’re like me, the concept is hard to grasp. There have been urban legends and rumors of such a thing happening, but does it actually exist?
Let’s assume that by some weird quirk of nature, you find yourself in this unfortunate situation. Don’t throw it out! Please.
Oxygen and sunlight are two of wines worst enemies. Once you pull the cork, oxygen starts to work on your wine. If the urban legends are true, and you are not able to finish the wine before it fizzles out or goes flat, here are a few suggestions on how to make sure that it doesn’t go to waste.
At this point in your wine’s life, it has not gone “bad”. It may taste flat or dull, and may not be as good, but there are still lots of things you can do with the wine.
- Make Sangria. Put together your favorite Sangria recipe and give your leftover wine new life.
- Use as a marinate.
- Make mulled wine. The weather is getting cooler and a nice warm cup of mulled wine might be just the thing on a cold evening.
- Use it in a sorbet.
- Make salad dressing.
- Use it as a base for BBQ sauce.
- Cook with it. Wine can really enhance your favorite spaghetti sauce or stir-fry.
If none of these works into your schedule, you can pour the wine into plastic ice trays and freeze it to be used later.
So if the unthinkable does happen, consider giving your wine new life and recycle.
One final note, if your wine is leftover because it tasted bad from the start, just pour it down the drain; cooking it, boiling it or adding fruit just it’s going to make it any better.
