If you're hosting this year's spooky soiree and it's a potluck, ask guests NOT to bring cupcakes, dessert, cookies or anything else that is sweet. Instead, request salads, side dishes or appetizers like veggie trays or chips with guacamole.

On a night like Halloween, fuel trick-or-treaters with a light yet hearty meal of tortilla soup* and quesadillas or chili* made with chicken or lean stew meat and brown rice. Set up a self-serve condiments bar with avocado, shredded cheese, sour cream and green onions so guests can add whatever they'd like.

Let the kids go out to trick-or-treat at least three times that night and go out with them each time. Walk quickly and cover a lot of ground. Kids can empty their loot right into the candy bowl you're using to distribute to other trick-or-treaters.

*Light and easy Tortilla Soup from our friends at Trader Joe's

1 can of premium white chunk chicken
1 jar of salsa
1 can of whole kernel corn, drained  
1 large can of organic diced tomatoes
1 box of organic chicken broth

Put all ingredients into a large pot and stir. Put on medium high heat until boiling. Turn heat to low and simmer until ready to serve. Garnish with crushed tortilla chips if desired. Makes 8 servings

*Crockpot chili

1 can of red kidney beans, rinsed and drained
1 can of black beans, rinsed and drained
1 can of diced stewed tomatoes
1 packet of chili mix
1 onion, diced(optional)
1 tomato, diced(optional)
1 pound of lean stew meat, cubed into smaller pieces

Put all ingredients into a crockpot making sure to add the meat last. Follow the directions on the chili packet regarding how much water to add.  Stir and cover. Set on low for six hours.
