Save your heart: Forget about those fatty slabs of beef in Vegas, and head to Utah for leaner buffalo meat.

The Buffalo Grill at Zion Mountain Ranch, just at the edge of Zion National Park, has no equal in Nevada.

Meals are served at a rough-hewn patio or indoors near a wood-burning stove, overlooking a buffalo ranch.

Hundreds of wild -- not farmed -- buffalo often gather in the pasture next to the restaurant, to the delight of photographers and young children.

Buffalo are majestic, and astonishing to watch.

On our first visit, we watched babies with their mother bodyguard snorting at camera-toting tourists who got too close.

On our second visit, we sampled the buffalo burgers.

Buffalo meat is leaner and more healthy than almost any other meat served at American restaurants.

It has less cholesterol and fat than salmon, pork, beef, or chicken. It also has more iron and vitamin B12.

Buffalo meat is also less filling. Order a buffalo burger or steak, and you won't feel as stuffed as if you had chowed down on one of those ubiquitous prime rib steaks served on The Strip.

A burger at The Buffalo Grill is $10.99 with toppings, and cheese is 99 cents extra, per slice.

Our diners liked the Utah brew, Evolution Ale, for $4.50. The label alone is worth the price.
