Sunlight Restaurant 100 South 7th St., South St. Paul

Amid the depressing news of foreclosure and business failure, it is exhilarating to hear of a new restaurant opening.

Sunlight Restaurant, 100 7th Ave. So. in South St. Paul is open for business with what looks like a challenging menu. Sunlight Restaurant is serving breakfast, lunch, and dinner and lists what we would expect for all three meals. Oh, sure, there is the two eggs any style with ham, bacon, or sausage. There is also the Florentine Omelet (spinach and feta cheese) if you want to nibble close to the edge, as they say.

I can honestly say I have yet to experience a sardine sandwich, but it is certainly a switch from a burger and fries for lunch. For your more traditional eaters, you can always get a BLT among a long list of available sandwiches. At my house it is said that if it can go between two pieces of bread, it' good enough for lunch. There's a lot of lunch, here, at The Sunlight.

Our area is, for better or worse, is known as Scandinavian. On this side of town we also have a rich tradition of Eastern European heritage, so it is with true anticipation that I look at an entree of the Cuban Sandwich try to muscle its way in.

The Sunlight Restaurant is located at a familiar corner, 7th and Marie, where Angelo's Pizza , now at Southview Shopping Center, inhabited for years. It is exciting to have a restaurant with a bold, new, offering for us right in the center of town where everyone needs all the good news and food they can get.
